Time for another classic bake, a Banoffee Pie! But in true Ridiculously Rich style, I just had to add my own little twist, this time in the form of an amazing walnut praline. It is seriously delicious, just be prepared to want to eat the whole thing!

INGREDIENTS

400g Digestive Bisciuts

220g Salted Butter

400g (1 Tin) of Caramel (you can make your own if you would like, but the pre-made caramel will be fine for this recipe

200g Walnuts (you can use any nut of your choice, or Peanut Butter would also be delicious)

100g Caster Sugar

1tsp Cinnamon

3 large or 3 small Bananas sliced

300ml Double Cream

1tbsp Icing Sugar

50g Dark Chocolate (or milk or white)

Pinch of Cinnamon for the topping

You will need a 20cm round tin (springform is best) and a food processor

 

METHOD

1. Line your tin fully (base and edges) with greaseproof paper

2. Add your biscuits to your food processor and slowly mix to break them up into a crumb

3. Melt your butter in the microwave, do this slowly and take care not to boil, once melted, carefully pour this into your biscuit mix and use a spoon to fully combine

4. Add your biscuit mixture to the base of your tin, take spoonfuls of the mixture and by hand, press up against the sides of your tin to create a case for your mixture, pop this in the fridge to set

5. Next, make your walnut praline. In a frying pan, add your caster sugar and walnuts. Place this on the hob on a medium-high heat until the sugar melts, once melted, add your cinnamon and stir using a wooden spoon to coat the walnuts. Once coated, place the mixture onto a greaseproof lined flat tin to cool in the fridge

6. Now we are ready to start assembling. Once set, take your base and spread your tin of caramel onto the base.

7. Melt your dark chocolate in the microwave, be careful not to burn. Add this and your your walnut mixture to your food processor and blitz into a paste. Spread this onto your caramel, then add your sliced bananas in an even layer

8. Next, whip your cream and icing sugar into stiff peaks. Spoon onto the top of your banoffee pie and sprinkle the top with a pinch of cinnamon for decoration

9. You are done! Cut yourself a deliciously big slice and ENJOY!
